
Hot or Not – Breakfast Edition!
Our Thoughts on the First Meal of the Day!

You’ve heard that breakfast is the most important meal of the day. Well, as it happens, February is National Hot Breakfast Month. We were curious about what our TJM folks have for breakfast, so we asked. Here are some of their responses:
Courtney Cole
Coffee ... Always! During the week, it's rare that I eat breakfast. However, on the weekend, it always happens on Saturday mornings.
Breakfast is one of my favorite things to cook. I feel like I have mastered big fluffy pancakes and cinnamon French toast. There is always a big spread though. Typically, it is pancakes or French toast, eggs, bacon, sausage gravy, biscuits, and fruit. I have a big family and Saturday morning breakfast is our weekly catch up time. [Editor’s Note: Yum! What time should we be there Saturday, Courtney?]

First of all, I just want to make it abundantly clear where I stand … no one in the world does breakfast like America does. And as much as I have enjoyed my visits to the U.K., if anyone tells you they do breakfast well, they’re liars. The eggs are runny, and nobody needs beans for breakfast. [Editor’s Note: Ah, the eternal dilemma – to beans or not to beans.]
Second, it’s a hot breakfast. Three eggs. Every day. When eggs got up to $9 (per dozen) in January is of 2023 through to the $6-ish they are now, and everything in between. I don’t eat out very often, so I don’t mind the cost difference to keep my breakfast full of protein.

Breakfast menu changes in our household frequently. The options typically include pancakes, waffles, pancake sausage dogs, chia pudding, or yogurt and granola. When I feel super special, I'll throw in cinnamon rolls or bacon. When Jameson has his soccer games we make sure there are some cheesy eggs included on the menu. [Editor’s Note: Shannon, can we come over on Saturday if there’s no room at Courtney’s? And is our presence enough to make it super special?]

I confess, my weekday breakfast isn’t usually hot, unless you count a toasted English muffin. A bit of peanut butter on that and a cup of yogurt usually suffices till lunch.
Weekends are another story. My wife attends a weekly (ironically named) Toastmasters meeting on Saturday mornings, so we often go out afterward with a group, usually to a locally owned restaurant, but sometimes to a chain. Breakfast is always hot, usually involving eggs, sausage, hashbrowns or grits, and biscuit or toast. On Sundays, we’ll either go out or have a simpler hot meal at home.

My weekday breakfast is a big glass of water and one cup of coffee. [Editor’s Note: We are amazed, Matt. Who can function on just ONE cup of coffee all morning?] don't eat food until noon on the weekdays. On weekends though, breakfast is one of my favorites. You will find me in the kitchen, cooking my family breakfast on Saturday and Sunday. Always HOT. Some of my favorites are:
- Eggs in a basket
- French Toast
- Old fashioned oatmeal (rolled oats)
- PancakesEggs over easy, toast, and sausage
Price of eggs is outrageous, but we love our eggs in this household, so we are grinning and bearing it and hope the price drops any day now.
